FISHERMAN'S SOUP RECIPE 

Another very interesting recipe from the Southern Nigeria is the FISHERMAN SOUP.

This soup is very rich and can be eaten on its own as a main course or with white rice or mashed potatoes. In Nigeria, it is community eaten with pounded yam, eba or semolina.

THE FISHERMAN”S SOUP

Ingredients

  • 2 pcs Fresh Fish (You can use tilapia)
  • 4pieces Jumbo prawns cut as desired
  • 1 Cup Isam (Periwinkle)
  • 4 Pcs Crab
  • 1.5 Cups cleaned fresh prawns
  • 1.5 Cup Chopped Uziza Leaf
  • 1 Small Bulb of Onion
  • 1 Cup of edible mollusca
  • 2 tbsp Cocoyam Paste for thickening
  • 2 cubes Seasoning (Knorr/Maggi) ...to taste
  • 1 tbsp Powdered dry shrimps
  • 1 tbsp Palm Oil
  • 1 tbsp Dry Pepper
  • 1 pc Scotch Bonnet Pepper
  • 2 tbsp Salt ...to taste

Instructions

  1. In a clean pot of boiling water, place your Cocoyam. Cook until it is soft. Once soft, peel it and pound till it is completely smooth, forming a paste.
  2. In a separate pot, add cook the fish, palm oil, add the scotch bonnet, onion, dry pepper, dry shrimps powder and seasoning cubes. Allow to cook properly in 1-2 cups of water.
  3. Once the fish is cooked, add the cocoyam paste and stir until smooth. Allow to simmer for a few minutes.
  4. Add the fresh jumbo prawns allow to cook for 2 minutes the add the fresh prawns and cook for a further 1 minute.. Add Uziza and allow to simmer for an additional one minute.
  5. Remove from hear and serve hot.
